I haven't posted any recipes recently. That doesn't mean that we aren't eating rice. In fact, we've finished a 25 pound bag of Jasmine Thai Rice already -- among other varieties.
For a really quick meal we've been putting either chicken salad or tuna salad into rice balls. The chicken salad tonight was like this:
1 cup grape halves
1/2 cup walnut pieces
1/3 cup sweet vidalia onion diced
leftover Easter eggs, diced
Salt, pepper
Miracle Whip
The vidalia onion is so sweet that it adds a nice note against the grapes, it's crunchy like celery. Of course I didn't have any celery...
I think a traditionalist would have a problem with a mayo based filling for rice balls, but we like it.
